Our Story

Forerunner Foods was born when owner Eric Velji got tired of the large corporate world in which he worked.  He was tired of the bureaucracy, the red tape, the chain of command, but most importantly the way large companies have procedures that don’t make sense but they aren’t changed because it is “how we’ve always done it”

Motivated by burnout and ready for a change, Eric went back to a personal passion: growing, sourcing, prepping, and cooking local food.  With the goal of running his own farm, Eric conducted a lot of research around how a small farm can be financially stable.  It is one of the toughest situations local farmers face.  Most only have sales outlets at local farmers markets, which is great on a nice day and crippling on a rainy day.  Eric realized wholesale was the way to go, but one farmer couldn’t meet the demand of local chefs.  Thus Forerunner Foods was born.

Forerunner Foods began exclusively to source local produce from small family owned farms directly for chefs and has grown into a full service restaurant supplier, specialty purveyor, importer of exotics, and coming soon the logistics behind a farm to table home produce subscription.  Everything to date has been built on the idea that everyone should eat local, everyone should eat seasonal, and that small independent restaurants need all the help they can get to compete with the big chains.

Instagram post 2242581779586351763_5762457858 34 minutes: a time we are very proud of today. Only 34 minutes elapsed today between the farmers at KSU's field station @hickorygrovefarmksu harvesting their blend of hydroponic lettuce till the time it was delivered to the cooks at Four41 BBQ @four41south . Not every farm to table delivery is quite this fast, but our goal is to minimize the time fresh produce sits around waiting to be delivered. .

Instagram post 2222245000035564547_5762457858 (🚨 Recipe below!) We love incorporating new produce in our box but it could leave you asking “how do I cook these things?” - This week’s Advocate box included daikon radishes and we want to familiarize you with what they are and how to include it in your next meal.
•
•
The daikon radish is a long white root vegetable that sorta looks like a carrot but don’t be fooled, it’s not. It is a mild radish, and when roasted the sweet and sharp flavor emerges! Before you cook your daikon, you will want to give it a good scrub and don’t worry, no peeling necessary. If you’re a first time daikon radish preparer/ taste tester 😜, try this recipe below and let us know what you think!

Ingredients- 🥕🥬
1 bunch daikon radishes, scrubbed and sliced
3 carrots, peeled and cuts
1 red bell pepper, sliced
1 shallot, sliced
I tbsp extra virgin olive oil
Salt & pepper
4 tbsp balsamic vinegar
•
•
Preheat your oven to 400 degrees. Combine your chopped and sliced daikon, carrots and red peppers, shallot and olive oil to a baking sheet. Season with salt, pepper or your choice of spices. Roast your vegetables for 25-30 minutes. Stir your vegetables a couple times until tender. Drizzle your roasted vegetables with balsamic vinegar and return to the oven. Roast for an additional 5 to 7 minutes. Serve alone or over rice. •
